Tasty Toast: Pineapple Pie

This sweet, tropical treat is just about the tastiest and easiest dessert one can prepare. The saying “easy as pie” comes to mind — because it doesn’t get much simpler than this.

Pineapple Pie

Start to finish: 30 minutes
Serves 8

Step 1: Prepare filling

Ingredients

1/4 cup butter

1/2 cup flour

1/2 cup brown sugar

1 teaspoon cinnamon

1/2 lemon

1/2 pineapple, cut into chunks

Instructions

  1. Melt butter in pot on medium-low heat
  2. Stir in flour until smooth
  3. Stir in brown sugar and cinnamon
  4. Squeeze in juice from lemon, stir
  5. Stir in pineapple chunks
  6. Cook on low, stirring constantly until filling begins to bubble (approximately 5 minutes)
  7. Add more sugar if desired, stir and set aside

Step 2: Prepare pie and bake

Ingredients

2 prepackaged pie crusts

Pie filling (from step 1)

1 egg white

Instructions

  1. Preheat oven to 450 F
  2. Prepare 1 premade crust in tin per box instructions
  3. Cut 4-5 slits in top crust
  4. Pour filling into bottom crust
  5. Place top crust on pie, then pinch top and bottom crust edges together
  6. Spread egg white over top of pie
  7. Bake for 14-18 minutes
  8. Remove from oven, let cool and serve
