Tasty Toast: Pineapple Pie

This sweet, tropical treat is just about the tastiest and easiest dessert one can prepare. The saying “easy as pie” comes to mind — because it doesn’t get much simpler than this.
Pineapple Pie
Start to finish: 30 minutes
Serves 8
Step 1: Prepare filling
Ingredients
1/4 cup butter
1/2 cup flour
1/2 cup brown sugar
1 teaspoon cinnamon
1/2 lemon
1/2 pineapple, cut into chunks
Instructions
- Melt butter in pot on medium-low heat
- Stir in flour until smooth
- Stir in brown sugar and cinnamon
- Squeeze in juice from lemon, stir
- Stir in pineapple chunks
- Cook on low, stirring constantly until filling begins to bubble (approximately 5 minutes)
- Add more sugar if desired, stir and set aside
Step 2: Prepare pie and bake
Ingredients
2 prepackaged pie crusts
Pie filling (from step 1)
1 egg white
Instructions
- Preheat oven to 450 F
- Prepare 1 premade crust in tin per box instructions
- Cut 4-5 slits in top crust
- Pour filling into bottom crust
- Place top crust on pie, then pinch top and bottom crust edges together
- Spread egg white over top of pie
- Bake for 14-18 minutes
- Remove from oven, let cool and serve
