Tasty Toast: Crunchy Tuna Taquitos With Pineapple Salsa Salad

Taquitos (or “small tacos”) are a well-loved meal, but depending on what you put in them, they’re not always healthy. Tuna taquitos are a simple solution to this problem thanks to the fish’s numerous health benefits.

I have been enjoying this quick and easy meal since I was a young girl. Now, its recipe can be appreciated by all.

Crunchy Tuna Taquitos With Pineapple Salsa Salad

Start to finish: 30 minutes
Serves 2

Step 1: Soften tortillas

Ingredients

• ½ cup olive oil
• 8 white corn tortillas

Instructions

1. Heat 3 tablespoons of olive oil in small skillet over medium

2. Soften each tortilla in skillet for about 30 seconds per side (place a few drops of olive oil on each warming tortilla)

3. Set softened tortilla aside and let cool

Step 2: Prepare stuffing

Ingredients

• 1 can tuna
• ¼ cup diced onion
• ¼ cup shredded cheddar cheese
• 1 tsp. garlic salt
• 1 tsp. pepper

Step 3: Assemble taquitos

Ingredients

• Remaining olive oil from step 1
• Prepared tortillas
• Prepared stuffing
• Wooden toothpicks

Instructions

1. Heat olive oil in large skillet over medium

2. Evenly spread stuffing on tortillas

3. Roll tortillas tightly and secure with wooden toothpick to build tacos

4. Brown taquitos in heated skillet (about 3-5 minutes, flipping continuously)

5. Set on paper towel to remove excess oil

Step 4: Prepare salsa and salad

Ingredients

• 2 cups chopped lettuce
• 1 large chopped jalapeño
• 1 large chopped Roma tomato
• ½ cup chopped cucumber
• ¼ cup chopped cilantro
• 3 rings canned pineapple

Instructions

1. Divide lettuce into 2 bowls for serving

2. Combine remaining ingredients to make salsa

3. Put salsa on top of lettuce

Step 5: Serve taquitos with salad on the side
