Guacamole is a world-famous dip that pairs perfectly with any bowl of chips, but there are a number of other possibilities to explore. The avocado’s natural origin is South Central Mexico and guacamole (mashed avocado with spice) was created by the Aztec people who lived there.
This variation comes from my hometown in Tucson, Arizona and features fresh veggies and cottage cheese.
Start to finish: 30 minutes.Servings: 4
1 medium Hass avocado (chopped or mashed)1/2 cup cottage cheese 1 cup diced red onion 1 diced tomato ½ Bunch Cilantro2-4 diced jalapenos (depending on desired hotness)1/2 fresh squeezed lime A dash of salt (optional)Half a bunch of cilantro (chopped)
In a medium bowl, mix all ingredients.

Avocados are extremely healthy but high in fat content, so here are four serving suggestions for using the guacamole to get through a full day in isolation that will hopefully help boost your immune system.
Breakfast: Top your toast with the guacamole and one egg.Snack: Dip corn chips in the guacamole and watch some TV.Lunch: Use the guacamole as a topping for chicken tacos. Add lettuce and cheese.Dinner: Put the guacamole in a tostada shell. Add lettuce and cheese (optional: Add guacamaya or tomatillo hot sauce).
